3 Lle: Bryn Williams

Chef Bryn Williams owns and runs the successful 'Odette's' restaurant in London where he strives to use the best Welsh produce. But how did he find his way to Primrose Hill, the location of his restaurant in the city? And what places influenced him in his remarkable journey?

Bryn visits three places of significance in his life - the Vale of Clwyd, Nice in France and London.

Bryn says, "Odette's is an old house set in a small village in the heart of London; it's both romantic and intimate. The best thing about living in London is the pace of life. There's so much to do here. I enjoy city life."

Bryn's passion for food became apparent at an early age and he worked on Saturdays at his local bakery in Denbigh. It was inevitable he would follow a career in the cooking and catering industry following his training at Llandrillo College.

He learnt his craft from the best. After experiencing the heat of fiery chef Marco Pierre White's kitchen, he spent three years working for Michel Roux Jnr at Le Gavroche in Mayfair.

With one eye on the future, Bryn has high hopes and his desire is to open restaurants in Wales, using Welsh produce.

"I like to push boundaries as a man, a cook and as a business," adds Bryn. "If someone tells me I can't do something, I'll try it just to prove nothing's impossible in business. I'd like to open a restaurant in Cardiff and in North Wales one day and show the world what great produce we have to offer here in Wales. Personally, I think Welsh produce is fantastic."
