Sergi Arola came to Madrid from his native Barcelona in 1997.
He worked in Barcelona with some of the world masters which included Ferran Adria, the head chef at El Buli.
He started in Madrid in a small bistro in Charmartin in a tiny kitchen that was no bigger than 8 meters square!!
His new style of cooking which had never been seen in the town before sparked great interest.
In 1998 he gained his first Michelin star and in February 2000 he moved to the Miguel Angel hotel where he opened his restaurant 'La Broche Sergi Arola' and gained his second Michelin star in December of the same year.
