Programme 1 - Round Two
Chicken with parmesan, pine nuts and basil wrapped in Parma ham.

Siwan's Recipe

Serves 2

Ingredients
2 chicken breast
2 basil leaves
2 tbsp parmesan - grated
2 tbsp pine nuts
6 slices of Parma ham
1 tbsp olive oil

Potatoes with Rosemary:
potatoes - enough for 2
pinch of salt
2-3 sprig of rosemary

Tomatoes with chilli:
cherry tomatoes - enough for 2
chilli - according to taste

Griddled Courgette:
1 courgette

Method

Place the pine nuts on a tray and toast under a grill. Make a pocket in the chicken breast and place the pine nuts, basil and parmesan in the middle of each pocket. Place the slices of Parma ham around the chicken breasts and wrap securely in foil. Poach the chicken in boiling water for 6 minutes, turning once. Remove the meat from the water and discard the foil. Heat the olive oil in a frying pan and seal the meat on both sides then place in a roasting dish and cook in the oven for 20 minutes at 180°C/Gas 4.

Potatoes with Rosemary

Drizzle some olive oil over a baking tray and warm in the oven at the above temperature. When the oil is warm, place the potatoes on the tray, sprinkle with salt and rosemary and bake for 1 hour.

Tomatoes with chilli

Place the tomatoes and a little chilli (or more if you like your food spicy) on a tray and place in the oven for 15 minutes on the same temperature as the potatoes. Serve the tomatoes without the chilli.

Griddled Courgette

Heat a griddle pan. Slice the courgette into strips and pour some olive oil over the strips and cook for a few minutes until they turn brown.

To serve - slice the meat into circles and serve with the vegetables
