Max, a chef's son, attended Catering School in Nice during the 70s, later gaining experience in both Stratford Upon Avon and Venice before returning to his native France to run the renowned Le Logis du Guetteur.
According to Max, his cooking is "influenced by the Provençal style which uses a lot of sauces, but cooking is all about evolution so you can't stay with the past all the time, you have to continue to develop your own recipes."
The French are notorious for taking their food seriously, so what did Max think of a reality TV show based on the subject?
"I think it's good to showcase our region here in France, but I also think it’s good for people to see the different ways of cooking and particularly for young people to get interested in cooking. Being a chef is a great career for a young person, because you get to see the world," he says.
