TRADITIONAL AND MODERN CHRISTMAS COOKERY WITH DUDLEY

In this week's Dudley (S4C, Wednesday, 8 December), I'll be looking at two very different approaches to Christmas dinner. Years ago, it would have been unthinkable to serve anything except turkey or perhaps goose on Christmas Day. However, things have changed, people have become more adventurous and there are a number of approaches to the celebration meal.

I recently visited Mary Davies, a mother of three and grandmother of four who farms with her husband Tegwyn at Caeremlyn, Henllan Amgoed near Whitland. Mary runs a successful turkey rearing business (she won the Best Turkey in Britain prize in 1998) and she also puts together Christmas hampers using only the best local produce – a round of Welsh ham, Ffynnonlas Dry Welsh White Wine, Welsh Elderberry Port, Welsh honey, mince pies, Welsh cheese, smoked salmon, a luxury Christmas pudding she makes herself and of course her very own Caeremlyn turkey.
