In the first programme of a new series, Welsh celebrity chef Dudley will prove that preparing a nourishing and healthy meal can be achieved with the minimum of fuss. As well as providing solutions for a gang of students from Carmarthen and a busy working mother, hes also joined by Brychan Llyr, who juggles a singing career with the family tipi holidays business at Hendre Farm near Aberporth.
Brychan and his father, the well-known poet Dic Jones, came up with the idea of holiday tipis as a way of diversifying their farm business. They now provide comfortable and weatherproof accommodation for up to 25 people in three purpose built tipis on the farm, providing a haven from the hustle and bustle of everyday life for families and groups of friends alike.
The flipside of Brychans life is his successful career as a musician, first with the band Jess and now as an international artist in his own right, with a significant fanbase in Italy and his native Wales.
Bearing in mind that Brychan is often on tour with his band and has travelled extensively in North Africa, Dudley recently showed Brychan how easy it is to use those exotic spices from his travels to cook a perfect stew with a twist using the traditional Moroccan cooking pot, the Tagine.
The Tagine is a simple yet very effective cooking pot, and is perfect for stews, says Dudley, The lid is a kind of upside-down funnel shape, which allows the steam from the stock and the vegetables to circulate around the mouth of the pot, and cook the meat slowly. This provides a wonderfully braised meat and a rich gravy.
