"There’s nothing like seeing produce prepared in the traditional way", says Dudley.
The scene for this edition of Dudley is the village of St Dogmaels, near Cardigan in West Wales. In the programme, Dudley prepares a special meal for the likeable conductor of no less than three local choirs.

Dudley is in prestigious company this week as he turns his attention to a small village in Cardiganshire that is home to the conductor of a choir that was voted the best in Wales in 2003. Islwyn Evans is not only the conductor of the Ysgol Gerdd Ceredigion Choir - he also presides over two other choirs in the district and the members of each one are extremely grateful for his dedication and drive.

The St Dogmaels Village Hall is the setting for a special concert and barbecue for 200 local people but the choir members are planning something a little bit more special than the usual burgers and hotdogs for their much-loved mentor. This is where our very own Dudley comes in! The young people of Islwyn’s choirs ask Dudley if he can rustle up something special for him in so that they can show their appreciation. With a treasure trove of local produce at his disposal, Dudley sets about his task with a little help from one or two members of Islwyn’s choirs thrown in for good measure!

Dudley finds that the locals are more than willing to supply him with fresh produce for Islwyn’s three-course meal and is given varieties of Caws Cenarth Cheese, fresh salmon from the River Teifi and freshly ground flour from the 17th Century Flour Mill in Cenarth.

The starter is Cheese and Leek Tart and Dudley uses two types of Caws Cenarth Cheese for his recipe - the award winning Perl Wen (White Pearl), which has characteristics of both Brie and Caerphilly cheeses, and Lancych, a quite unique and mature cheese.

"Not all cheese will suit this particular recipe", Dudley explains, "but it’s worth trying out a range of Welsh varieties on your cheese board."

Fresh Salmon Cannelloni is the main course, which is an appropriate choice since the River Teifi is famous for its salmon and sewin. Indeed, fishing remains a popular pastime on the Teifi and, in years gone by, the river was dotted with coracles carrying fisherman who would use nets to catch food for feeding the communities living along the river.

"Oily fish, such as salmon, contain essential fatty acids that can help prevent heart disease by making the blood less likely to clot and reducing inflammation", says Dudley, "I’m a great believer in freshly-caught local fish and there’s plenty available in Wales."

Finally, the dessert involves a tower of fresh fruit that can only be the perfect way to round off such a sumptuous feast. Islwyn is renowned for being a perfectionist and what can be more befitting for him than to be served the perfect meal at the request of the best choir in Wales.
