DUDLEY IN UMBRIA

Chef Dudley Newbery offers a taste of Italy. In the company of Wendy and Alvaro Tardioli who live on the Gower, Dudley travels to Umbria to meet their Italian family. This colourful portrait is not simply a programme about food, but family values, friendship - and a way of life.

DUDLEY IN UMBRIA

Affectionately referred to as the ‘Green Heart of Italy’ and ‘The Holy Land of Italy’ the region of Umbria is a verdant pastoral, hilly landscape - strewn with grapevines and olive trees - that provides an abundance of natural produce. Umbria is one of the smallest regions in Italy and yet it is one of the country’s greatest exponents of, amongst other things, high quality wine, meats and olive oils. The basis of Umbrian cooking is deeply imbedded in family traditions, where the art of a simplistic approach to using fresh authentic local ingredients has been nurtured and passed down from generation to generation.
  • Historically, the inhabitants of Umbria have been completely reliant on the riches of the surrounding terrain due to the region being one the only ones in Italy that has no coastline. The original denizens of Umbria were the ancient Umbri (after whom the region is named) who quickly found that the sprawling wooded hillsides were abundant with fresh fruit, vegetables, herbs and sources of meat, poultry and game.


  • Agriculture is of the most significance to maintaining the Umbrian food traditions, which are mainly based on meats, cheeses, legumes and truffles. The combination of basic ingredients and a simplified approach to cooking in Umbria augments a proud disdain of a more sophisticated type of cuisine. The land provides all that the Umbrians have ever needed.


  • The woodlands of Umbria hold many treats that, in the past, supplemented the diet of the Umbrian peasants. Delights such as strawberries, currants, hazelnuts and raspberries were gathered as a source of additional sustenance whilst in contemporary times they’re used as the basis for the preparation of jams, sweets, desserts and liqueurs.


  • Umbria’s lush green pastures provide the perfect fodder for manufacturing high quality dairy goods. Cattle breeding on this unspoilt and uncontaminated land is the reason why dairy and meat produce is of such a high standard. Furthermore, the custom and art of good food in Umbria is reliant on the deeply rooted farming traditions that have remained unchanged for centuries.


  • Neatly arranged vines and trees adorn the entire region, which not only beautify the land but also provide its populace with a rich food source. The benefits of the rich soil, careful cultivation and a climate that is extremely apt for growing and breeding all combine to gift Umbria with the resources required for a renowned food culture.
