100g/3 ½ oz brown sugar
250ml/9 fl oz of water
3 cloves of garlic
1" piece of fresh ginger - finely chopped
1 bottle of good red wine
1 lemon - juice and zest
1 glass of rum (170ml/6fl oz)
full teapot of tea

METHOD

Melt the sugar with the water. Add the garlic cloves and ginger and boil for 5 minutes before adding the wine, juice and zest of the lemon, tea and rum. Heat everything on a moderate heat, but do not boil. Serve hot.
