METHOD
The crust
Mix flour and sugar in large bowl. Add the butter and rub through the dry ingredients to form a light crumb. Add the egg yolks and 1 tbls of cold water and mix well to form a dough. cover with cling film and rest for 30 minutes in the refrigerator.
Filling
Peel and remove core and seeds then chop the apples and place in a large mixing bowl with all of the other ingredients and mix together. Roll out the pastry to approximately 40cm wide then transfer to a baking sheet. Place the fruit mixture into the middle of the pastry then gather the ends of the pastry and wrap over the side of the fruit to surround the fruit and stop it from spilling out onto the tray. Brush with the beaten egg and cook in a pre heated oven 200c/ gas 6 for 40-50 minutes depending on your oven.
Serve with thick cream or greek style yoghurt.
