STILTON AND BROCCOLI SOUP

INGRIEDIENTS

450 g/1 lb of broccoli - roughly chopped
570 ml/1 pint of milk
570 ml/1 pint of vegetable stock
225 g/8 oz of stilton - grated or crumbled
50 g/2 oz of butter
55 ml/2 fl oz of white wine
2 stalks of celery
1 medium onion - finely chopped
salt and pepper
METHOD
Melt the butter and cook the onion until soft. Add the celery and the broccoli and cook for 3 minutes. Pour in the stock and the wine and bring to the boil. Put a lid on it and cook for 20 - 25 minutes until the vegetables are cooked. Leave to cool for a while. Liquidise the mixture, pour back into the saucepan and add the milk and stilton. Heat through again and taste for seasoning
