METHOD
Mix the lime juice, rind, garlic, coriander, oil, wine and honey in a bowl. Add salt and pepper to taste, and mix once again. Dip the chicken in the mixture before lifting onto a grill pan. Pour the remaining sauce over the chicken. Cook under a hot grill for about 10 minutes each side. Serve with vegetables or salad.
