BACON AND SPINACH BRUSCHETTAS

INGRIEDIENTS

12 thick slices of french bread or ciabatta
olive oil
1 tablespoon vegetable oil
6 slices unsmoked back bacon - chopped
½ onion - finely chopped
1 clove of garlic - crushed
125 g/4 ½ oz of fresh spinach- washed
2 tablespoons double cream (optional)
100 g/3 ½ oz of extra mature cheddar cheese
salt and pepper
METHOD
Heat the vegetable oil in a frying pan, add the bacon, onion and garlic and cook for 5-7 minutes. Add the spinach and mix well cooking for 2-3 minutes until the leaves are wilted. Add the cream if using at this stage, along with the seasoning. Meanwhile sprinkle the bread slices with a little olive oil and put on a baking tray. Grill for a few minutes until golden brown. Place spoonfuls of the bacon and spinach mixture onto the bread and cover with thin slices of Welsh cheese. Place under a hot grill until the cheese melts. Serve immediately.
