BRANDY SNAP BASKETS

INGRIEDIENTS

125g/4½oz of butter
125g/4½oz of light brown sugar
125g/4½oz of golden syrup
4 teaspoons of lemon juice
125g/4½oz of plain flour
1 teaspoon of ginger ice cream - of your choice
summer fruits

fresh mint
METHOD
In a saucepan melt the butter, sugar and golden syrup, mix into a smooth treacle. In a bowl sieve the flour and add the ginger. Add the treacle mixture from the saucepan and work into the flour. On a greased tray place dollops of the mixture and bake in the oven temp 375 f or Gas 5 for 8 - 10 min. To create a basket shape mould the brandy circle over an upside-down bowl, leave to cool and harden. To serve fill the basket with ice cream and decorate with fresh fruit, mint and a coulies.
