METHOD
Heat some olive oil in a frying pan and gently fry the onion until soft. Add the fresh ginger and the chillies. Add the sugar. While this is all simmering wash the spinach and stuff the lot into the frying pan and cook. Finally, sprinkle the garam masala over the lot and mix well before eating.
