HOT ROASTED SALMON ON A BED OF WARM SALAD

INGRIEDIENTS

200g/7oz of Glangwili smoked salmon
4 tablespoons of walnut oil
1 red onion - sliced
200g/7oz of new potatoes - cooked
1 red pepper - roasted and skin removed
2 tablespoons of raspberry vinegar
110g/4oz of cherry tomatoes - halved
1 packet of mixed salad
1 packet of rocket
1 bunch of basil - roughly chopped
1 lemon
Anglesey sea salt
black pepper
METHOD
Remove the skin from the salmon and break the fish into pieces. Fry the onions for 1 minute. Halve the potatoes. Slice the pepper into strips and add to the onions. Add the tomatoes and raspberry vinegar and heat the ingredients. Put the rocket, salad and basil in a large mixing bowl and add the warm ingredients to them and mix well. Add the salmon and season before serving. Lemon slices can also be used to serve.
