1 ripe tomato - peeled, seeded and finely chopped 1 tablespoons of balsamic vinegar pinch of sugar ¼-½ teaspoons of paprika salt black pepper 3 tablespoons of extra virgin olive oil
METHOD
Mix the tomato, vinegar, sugar, paprika and season. Leave for 10 minutes. Mix in the oil and season.
