METHOD
Toast the bread under the grill until golden brown. Butter the toast before adding a thick layer of pesto. Place the tomatoes and basil leaves over the pesto and finish with slices of 'perlwen' cheese. Place under the grill until the cheese is melted. Serve with fresh salad.
