METHOD
Roast the garlic at 200°C/Gas 6/fan oven 180°C for about 20 minutes until soft. Cool, then peel and scrape out the flesh into a blender. Mix the garlic with the egg and mustard in a blender. Mix the oils in a jug. With the motor running drizzle the oil through the funnel until thick. Add lemon and salt and pepper.
Tastes creamy, smoky. Perfect for crudités, roasted vegetables.
