salt
black pepper
2 teaspoon of white or red wine vinegar
6 teaspoons of olive or sunflower oil

METHOD

Mix a few grindings of salt and pepper with the vinegar. Slowly whisk in the oil until dressing thickens. Taste and adjust seasoning if necessary.

Tastes piquant, light. Perfect for potato salads, French bean salads.
