50g/2oz of crumbled stilton
4 tablespoons of walnut oil
1 tablespoon of white wine vinegar
2-3 teaspoons of chopped fresh sage
salt
black pepper

METHOD

Mix the cheese, oil, vinegar, 2 teaspoon of sage, and season. Whisk until thick and creamy. Taste and season.

Tastes rich, creamy and tangy. Perfect for spinach / rocket salads with bacon, celery and apple salads.
