4 tablespoons of sunflower oil
2 tablespoons of red wine vinegar
salt
black pepper
100g/4oz of chopped bacon rashers

METHOD

Mix the oil and vinegar, and season. Fry the bacon until the fat runs. Increase the heat and fry until crisp. Turn off the heat. Drain the bacon. Stir the oil vigorously into the pan; add the bacon. Use hot.
