METHOD
Whilst preparing the chicken, preheat the oven to 160ºC. With a sharp knife, cut into the meat around ½" deep. Put six of these cuts on each breast and four in both legs. Peel the zest from one of the limes. Push pieces of garlic, ginger and lime zest into the cuts. Squeeze the lime juices over the meat. Place the chicken in a roasting tin and push the onion halves and the remaining ginger, garlic and lime into the cavity. Rub the olive oil over the chicken before sprinkling salt and black pepper over it. Roast in the oven for 20 minutes per pound and another 20 minutes at 160ºC. Serve hot or cold.
