METHOD
Place 2 pieces of foil one on top of the other (for each parcel). Place two pieces of orange and a few tarragon leaves on the foil. Place the salmon on the top. Add a little salt and black pepper over the fish before covering with some more tarragon, two further pieces of orange and a splash of wine. Seal the parcels tightly and cook in the oven for 10-15 minutes at 160ÂșC. Serve hot or cold.
