METHOD
Heat the olive oil in a frying pan and fry the onions and garlic until soft. Add the tomatoes and thyme and roast in the oven at 200ºC for 20 minutes (keeping the tomatoes whole). Leave the tomatoes to cool in the oil before pouring into a large jar to store in the fridge.
