METHOD
Place the bulgar wheat in a large mixing bowl and cover with the hot stock, (enough to cover the bulgar wheat). Leave until the wheat has absorbed all the stock (approx 15 - 20 min). Heat the oil in a pan, add the onions garlic and chilli, and fry until softened. Add the honey, zest of lime, spring onions and peas, stir and heat through. Add the warm ingredients to the bulgar wheat, mix well before adding the fresh mint. Season with salt and pepper to taste. Serve hot or cold.
