STICKY TOFFEE PUDDING

ENOUGH FOR :

INGRIEDIENTS

170g/6oz of dates
½ pint/10fl oz of water
1 teaspoon of bicarbonate of soda
56g/2oz of unsalted butter
170g/6oz of caster sugar
2 eggs - beaten
170g/6oz of self-raising flour
2 drops of vanilla essence

the sauce:
284g/10oz of double cream
56g/2oz of demerara sugar
2 teaspoons of black treacle
METHOD
Preheat the oven to 180ºc. Prepare a 2lb loaf tin lined with cling film. Boil the dates in the water. Add the bicarbonate of soda. In a food processor, cream the eggs, sugar and butter before adding the flour and the vanilla essence. Pour the mixture into the loaf tin and bake in the oven for 35-40 minutes.

The sauce:
In a saucepan, boil the cream, sugar and treacle until the sugar has melted. Serve the cake warm with a spoonful of sauce.
