PESTO CHICKEN & POTATO SALAD

INGRIEDIENTS

520g/1lb 2oz of new potatoes -unpeeled
3 chicken breasts - skinned ,cooked and cut into chunks
113g/4oz of baby spinach leaves
2 tablespoons of pesto
juice of 1 lemon
3 tablespoons of olive oil
anglesey salt
black pepper
METHOD
Boil the potatoes in boiling water for 15 minutes. Drain and return to the pan, and roughly crush with a fork. Add the chunks of chicken to the pan then the spinach leaves. Mix gently, using a large spoon or your hands. Finally add the pesto, lemon juice and oil to the other ingredients, and toss to coat everything in the dressing. Season to taste.
