TUNA PASTA NICOISE

INGRIEDIENTS

350g/12oz of pasta
4 tablespoons of olive oil
½ tablespoon of lemon juice
½ tablespoon of white wine vinegar
300g/10oz of cherry tomatoes - halved
50g/2oz can of anchovies - drained and chopped
80g/3oz can of tuna in water - drained and broken into chunks
a bunch of fresh basil and parsley - chopped
anglesey salt
black pepper
METHOD
Cook the pasta in a pan of boiling salted water for 10-12 minutes or according to the instructions. In a pan with a lid, heat the oil, lemon juice and vinegar, adding the tomatoes and anchovies then cover and gently warm through until the tomatoes just start to burst and soften. Drain the pasta and return it to pan. Add the tuna to the pasta before adding the tomato sauce and the herbs. Season with freshly ground black pepper. Serve immediately.
