HADDOCK IN A CHEESE AND CHIVE SAUCE

INGRIEDIENTS

2 pieces of haddock - skinned
1 teaspoon of butter
1 tablespoon of low-fat cheese - grated
1 teaspoon of skimmed milk
1 teaspoon of plain flour
a handful of fresh chives - finely chopped
anglesey salt
black pepper

the potatoes:
1 teaspoon of butter
½ pint of water
½ onion - thinly sliced
1 large potato - thinly sliced
anglesey salt
black pepper
METHOD
In a deep pan, heat the butter until it melts. Add the flour to create a paste and then add the milk a little at a time. Add the cheese then the chives and mix into the sauce. Put the pieces of fish in the sauce and leave to simmer on a moderate heat for 5-8 minutes. Add the salt and pepper to taste. To prepare the potatoes, melt the butter in a saucepan, add the water, onions, potatoes and salt and pepper and leave to simmer for around 10-15 minutes until the potatoes are tender. Serve the fish with the potatoes and a spoonful of sauce.
