METHOD
In a deep pan, heat the butter until it melts. Add the flour to create a paste and then add the milk a little at a time. Add the cheese then the chives and mix into the sauce. Put the pieces of fish in the sauce and leave to simmer on a moderate heat for 5-8 minutes. Add the salt and pepper to taste. To prepare the potatoes, melt the butter in a saucepan, add the water, onions, potatoes and salt and pepper and leave to simmer for around 10-15 minutes until the potatoes are tender. Serve the fish with the potatoes and a spoonful of sauce.
