MANGO STUFFING

ENOUGH FOR :

INGRIEDIENTS

2 onions - roughly chopped
2-3 cloves of garlic - finely chopped
25g/1oz of butter - for frying
bunch of fresh mint - chopped
bunch of parsley - chopped
1-2 tablespoons of dried currents
1-2 tablespoons of dried sultanas
1-2 tablespoons of dried raisins
½ loaf of bread - crumbled
2 mangos - cubed
salt and pepper- to taste
METHOD
Melt the butter in a large frying pan. Fry the onions and garlic until soft. Add the mint and parsley and heat through, before adding the dried fruit. Mix well. Add the breadcrumbs, mango, salt and pepper. Heat through for 2 - 3 min. Leave to cool before serving.
