METHOD
Heat a frying pan and melt the butter. Cook the apples for 8-10 min until they begin to brown. Add the sugar to the pan and melt before adding the apple juice, zest and juice of the lime and cinnamon. Simmer for approximately 4 minutes.
In a large bowl, whisk the egg whites and add the lemon juice. Whisk well, until the mixture has thickened enough to form peaks. Add the sugar in three steps mixing well. The egg white should now be thick and firm.
Put the apple mixture in a suitable Pyrex dish. Scatter the biscuits on top followed by the meringue mixture. Bake in the oven at a high temperature of (220 °c ) until the top is brown and crisp.
Tip
To crush the digestive biscuits place the biscuits in a plastic bag and crush with a rolling pin - easy and no mess!
