METHOD
Mix the chopped egg with the capers, parsley, shallot, salt, black pepper and lemon juice.
Lay the slices of smoked salmon, shiny-side down, on your work surface and place a spoonful of the egg mixture in the centre.
Fold the slices over, making a square parcel. Tie up the parcels with 2 chives each, creating a present' effect.
