METHOD
Using a large plate to prepare, pour plenty of olive oil over the bread and leave to soak for a while.
In a bowl, mix together the tomatoes, onions, garlic, parsley, salt and pepper and leave to soak. Add the lettuce and cucumber at the last minute.
Serve the bread with a spoonful of the tomato mixture on each piece and more olive oil.
