PENNE CON POMODORO & PANCETTA

INGRIEDIENTS

½ onion - finely chopped
2 tbsp good quality olive oil
1 clove garlic - finely chopped
1 ½ lb pack of bacon ‘Lagons'
1 lb small tomatoes
1 piece celery - finely chopped
Handful fresh Parsley - finely chopped
2 glasses White Wine
1 tsp sugar
Salt and black pepper

To serve
Fresh penne - enough for 4
Fresh Basil leaves
METHOD
Place the tomatoes in a saucepan of boiling water and heat them until they begin to blister. Place in cold water to remove the skin and then halve.

Heat the oil in a deep pan, soften the onions, garlic and celery. Then add the bacon and black pepper and brown. Pour in the wine, fresh tomatoes, salt, pepper and parsley and leave to simmer for 8-10 minutes on a low heat.

In the meantime, cook the pasta for a few minutes in boiling water.
Mix the fresh pasta in with the sauce and serve with fresh basil leaves and Parmesan cheese.
