TAGLIATELLE AL RAGU

INGRIEDIENTS

1 onion - roughly cubed
1 carrot - quartered
1 clove garlic
1 piece celery - halved
2 tbsp olive oil
Salt & black pepper
100g minced beef
100g beef pieces
1 glass white wine
Fresh tomatoes - strained and kept in a jar
3 tbsp tomato puree
Water (as needed)

To serve:
Fresh pasta
METHOD
In a good-sized saucepan, heat the olive oil and cook the onion, carrot, garlic and celery for about 5 minutes. Then add the minced beef and beef pieces, salt and pepper and a splash of wine. Brown the meat and vegetables and simmer for 10 minutes.
Add the tomato puree, fresh tomatoes and leave to simmer 15 minutes.
Add the water if the sauce gets too thick.

To serve, remove the meat pieces and vegetables from the sauce and leave to one side.
Serve with fresh pasta.
