BANCYFELIN PANCAKES

ENOUGH FOR :

INGRIEDIENTS

250g/8 ounces of self-raising flour
1 teaspoon of baking powder
3 ounces of caster sugar
2 eggs
300 ml / ½ pint of milk
2 ounces of cooking oil
¼ teaspoon of Bicarbonate of Soda
2 teaspoons of vinegar
To serve - caster sugar and butter
METHOD
Put the flour, baking powder and sugar in a mixing bowl or a food processor.
In a cup, mix the bicarbonate of soda with the vinegar.
In a jug, mix the eggs and milk together before adding the oil.

Pour the egg mixture and vinegar mixture into the dry ingredients and whisk until smooth. Pour the mixture into a jug and leave to stand for a while.

Heat the frying pan and grease with a little oil. Pour ‘circles' of the mixture onto the pan, cook on both sides for approximately 2-3 minutes until lightly browned.

Serve with a little sugar and butter.
