SAUSAGE, BACON & BEAN CASSEROLE

INGRIEDIENTS

1 onion, finely chopped
6 sausages - each cut into 3 or 4 pieces
2 slices of bacon - cut into small pieces
A tin of beans of your choice (flageolet, kidney beans, butter beans)
Half a pint of vegetable stock
A tin of chopped tomatoes
Olive oil
Halen Môn salt
Black pepper

To serve
Rice or mashed potato to accompany the dish
METHOD
Fry the onions in a little olive oil until soft. Add the sausages and brown them, before adding the bacon.

Add the beans and stock and place in an oven at 160'C for about 20-30 minutes. Remove from the oven, add the tomatoes, salt and pepper and cook for about 15 minutes more.
