METHOD
Wash the oysters under cold running water. Using an oyster knife, open each oyster, sliding the knife along the upper and under sides of the meat to sever the muscles.
Chop up the rest of the ingredients.
Mix together the honey, lime juice, salt and pepper.
Leave to stand for 20-30 minutes.
Serve the oysters, topped with a spoonful of salsa.
