METHOD
Mix the sauce ingredients together in a bowl and leave to stand.
Brush the slices of bread with the oil and a pinch of salt and pepper.
Do the same thing with the Haloumi and tomatoes.
Toast the bread on the barbecue, rub garlic on both sides and keep warm while cooking the Haloumi and tomatoes on both sides.
In a bowl, mix the rocket and the pine nuts with a little sauce.
To serve, place a little rocket on the bread and a slice of Haloumi on top. Top with a slice of tomato and serve immediately.
