METHOD
Toast the bread.
Place the oil in a roasting tin and add the mushrooms.
Mix the garlic, parsley and butter together and place a blob on top of each of the mushrooms.
Place in a hot oven for a quarter of an hour.
Spread the mustard on the bread, and place a little lettuce and spring onion on each slice.
Place the mushrooms on top and add a squeeze of lemon juice.
