METHOD
Mix the lamb, mint, tomato passata, egg, bread crumbs and salt together in a bowl.
Roll out the mixture onto foil paper, between 8 and 12 inches long.
Pour some oil into a saucepan, add the onions, celery, leeks and garlic and fry for half a minute.
Remove the saucepan from the heat and add the carrots.
Put the mixture on top of the lamb and roll swiss roll' style.
Place in the oven at 150°c for 40 minutes.
Serve with potatoes, leeks and the tomato sauce.
