LAMB SURPRISE

INGRIEDIENTS

250g of minced Welsh lamb
1 tablespoon of fresh mint - finely shredded
4 tablespoons of tomato passata sauce
1 egg
100g brown bread crumbs
A pinch of salt
Olive oil, a sprinkling for frying
1 onion, shredded
2 sticks of celery, chopped
Half a leek, sliced
1 clove of garlic, crushed
1 carrot, grated
METHOD
Mix the lamb, mint, tomato passata, egg, bread crumbs and salt together in a bowl.

Roll out the mixture onto foil paper, between 8 and 12 inches long.

Pour some oil into a saucepan, add the onions, celery, leeks and garlic and fry for half a minute.

Remove the saucepan from the heat and add the carrots.

Put the mixture on top of the lamb and roll ‘swiss roll' style.

Place in the oven at 150°c for 40 minutes.

Serve with potatoes, leeks and the tomato sauce.
