METHOD
Grease a 1 Ib loaf tin with butter. Scatter the brown breadcrumbs onto the sides and bottom of the loaf tin. Fry the onions in butter.
Put the meat in a food processor and process until finely chopped. Add the herbs, white breadcrumbs, onions, bacon stock, nutmeg and egg and mix well.
Put the mixture in a tin and cover with foil. Put in the oven for approximately one hour at a temperature of 170C.
Turn the loaf out of the tin and cover the loaf with the remaining breadcrumbs. Put the loaf under the grill until the breadcrumbs start to brown.
Serve with potatoes and vegetables or salad.
