METHOD
Take a little of the papaya, the chilli and garlic, and pound together with a mortar and pestle or in a blender. Put in a bowl and stir in the beans, peanuts, shrimp, tomato and the rest of the papaya. Mix well, then stir in the lemon juice, sugar and fish sauce. Serve accompanied by raw vegetables chopped into bite-sized pieces - perhaps morning glory (swamp cabbage) and green (string) beans - sticky rice and roasted chicken.
