SOM TAM THAI (GREEN PAPAYA SALAD)

INGRIEDIENTS

300 g/11 oz of green papaya - peeled and cut into long matchsticks
7 fresh small whole green chillies
6 garlic cloves - chopped roughly
50 g/2 oz of green (string) beans - cut into 2.5cm/1" pieces
60 g/2½ oz of unsalted roasted peanuts
25 g/1 oz of dried small shrimps
6 cherry tomatoes - quartered
50 ml/2 fl oz of lime or lemon juice
1 tablespoon palm sugar
1 tablespoon fish sauce
METHOD
Take a little of the papaya, the chilli and garlic, and pound together with a mortar and pestle or in a blender. Put in a bowl and stir in the beans, peanuts, shrimp, tomato and the rest of the papaya. Mix well, then stir in the lemon juice, sugar and fish sauce. Serve accompanied by raw vegetables chopped into bite-sized pieces - perhaps morning glory (swamp cabbage) and green (string) beans - sticky rice and roasted chicken.
