METHOD
Put the chips in boiling water and simmer until fairly soft but not slushy. Drain on some kitchen paper.
Heat the oil in a saucepan and fry the chips for 3-4 minutes.
Drain on kitchen paper and serve with some sea salt.
TIP
When the potatoes are in season, clean them and boil for one or two minutes. Take off the heat and place in cold water straight away. Once they are cooled, transfer to a plastic box and place in the freezer.
Christmas day - take out of the freezer and boil.
