METHOD
Fry the onions, garlic and red peppers in olive oil until soft.
Add the curry powder and stir well. Add the turkey.
Add the prawns and lower the heat, stirring frequently. If the mixture seems too dry, add more olive oil.
Cook the rice in boiling water.
When cooked, add the rice to the turkey and prawn mixture
Fry the eggs in a frying pan, adding a little butter
To serve, spoon onto a plate and place the fried egg on the top with a little fresh coriander.
Serve with the red chillies, Nam Pla sauce, dried chillies and sugar in small side dishes.
