METHOD
Open the anchovies out flat and remove the back bone. Add a little salt to them before covering in flour. Shake off the excess flour.
Break the eggs into a bowl and beat until fluffy. Dip the anchovies in the egg mixture.
Fry the anchovies in the hot oil for a minute both sides. Take them out and put them on some kitchen paper to remove the excess oil.
Serve immediately with segments of fresh lemon.
