METHOD
Heat the oven to 375 degrees. Brush four large squares of foil with a little oil.
Mix together the green pepper, onion, garlic and basil. Put a fillet in the center of each foil piece and top with the pepper mixture.
Drizzle with lemon juice and the remaining oil and season with salt. Fold the foil into parcels and place on a baking sheet in the oven for 20 minutes or until the fish flakes easily.
Unwrap the foil and transfer the fish, topping and cooking juices onto serving plates.
Garnish with lemon slices and serve.
