METHOD
The marinade:
Put the olive oil, vinegar, garlic and coriander in a bowl. Add salt and pepper to taste and mix well.
The kebabs:
Place the ingredients on skewers.
Place the skewers in the marinade, covering the ingredients with the marinade.
Put cling film over the kebabs and leave to stand in a fridge or at least two hours.
Cook the kebabs over a hot barbecue for 5 to 10 minutes, turning regularly.
Whilst the kebabs are cooking, spoon the remaining marinade over them.
To decorate:
Sprinkle the coriander over the kebabs.
