1 lobster cooked 1 stick of lemongrass - finely chopped ½" of root ginger - finely chopped 1 red chilli - finely chopped hand full of fresh coriander ½ a red onion 2 lime leaves soaked and chopped 1 tablespoon of olive oil 2 tablespoons of Thai fish sauce (nam pla) pepper
METHOD
Mix all the sauce ingredients together in a bowl. Spread over the lobster and cook for 5-10 minutes under the grill.
